This Shiraz is a joint venture with M Chapoutier and Ron and Eva Laughton in the Heathcote Region of Victoria. It is made with a mix of French clones and Australian clones of Shiraz. The grapes were fermented for 6 weeks in open concrete vats using wild yeasts. It was then cellared in new French oak casts for 7 months. It has aromas of red fruit and spices and on the palate intense fruit, minerality from the ironstone gravels with hints of tobacco. Eventhough its currently 6 years old, the winemaker believes it can be cellared for up to 20 years. Great served with bbq, roasted tomato dishes and aged cheddar.
