The fruit for this wine is grown on the side of Lake Garda north of Milan and the grape varieties are traditional Valpolicella varieties of 80% Corvina and 20% Rondinella. Once the base wine has nearly finished ferment it is transferred to finish its ferment on the fresh pomace left from making Amarone.
This gives the wine spicy red cherries on the nose and on the palate dried flowers, cherries and soft tannins to finish.
